Kale Salad with Mustard Vinegar Dressing
Kale and a mix of fresh salad greens(I’ve always uncluded spinach, arugula and escarole (all cold hardy greens)
Pear, cut into 1/2-1inch pieces
Feta Cheese
Walnuts-roasted, coated in maple syrup
Dressing:
3 T olive oil
2-3 tsp shallots
1-2 T Dijon mustard
2-3 tsp sherry vinegar
1 tsp sugar
1/2 tsp salt
